Sweet Potato Fries:
Ingredients:
1 large sweet potato, sliced into sticks or wedges
2 egg whites
1 tsp dried oregano
1 tsp dried thyme
1 tsp garlic powder
1 tsp sea salt enough oil to coat fries
Preheat oven to 450 degrees. Line a baking sheet with parchment or foil and oil lightly. Place sweet potato sticks on a microwave-safe plate and cook for 1-2 minutes or until they’re flexible. In a shallow bowl or container, whisk egg whites and all seasonings together until well blended. Toss sweet potato sticks in mixture but drain off any excess before placing them in a single layer on the prepared baking sheet. Bake for 10 minutes, then flip pieces and bake until golden brown, about 15 minutes.
Quinoa salad:
Ingredients:
1 box of Organic Quinoa
1 red pepper
1 red pepper
1/2 English cucumber
1/2 red onion
Cilantro (as much as you like)
1 tbsp of olive oil
1/2 tsp ground cumin & salt/pepper (to taste)
Boil 2 cups of water. Add 1 package of organic Quinoa. Let boil, covered for 15 minutes. Chop or julienne vegetables. Once Quinoa is boiled and ready. Let stand for 5 minutes. Fork through the Quinoa once cooled. Add in the vegetables, olive oil, ground cumin and salt/pepper. Add cilantro on top. Enjoy either cooled or warm.
Baked salmon:
1/2 red onion
Cilantro (as much as you like)
1 tbsp of olive oil
1/2 tsp ground cumin & salt/pepper (to taste)

Salmon (Use fresh or frozen salmon depending on your time constraints, budget & own preference)
Salt & pepper
Olive oil
Cilantro (as much as you like)
1/2 Lemon
Preheat oven to 350. Marinate the salmon with olive oil, salt & pepper. (You can always add onions, different spices. All to your preference.) Squeeze 1/2 lemon on top of the fish and add as much cilantro as you can handle. Wrap each salmon fillet in an individual foil wrap. Put in the oven for about 30 minutes, or until cooked through. Unwrap each individual fillet. Garnish with some cilantro and enjoy.

Quick banana bread:
Preheat oven to 350.
Sift before measuring:
1 3/4 cups of all-purpose flour
2 1/4 teaspoons double acting baking powder
1/2 teaspoon salt
Blend until creamy: 1/3 cup shortening, 2/3 cup sugar, 3/4 teaspoon grated lemon rind
Beat in: 1 to 2 eggs 1-1 1/4 cups ripe banana pulp Add sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth. (Fold in: chocolate chips, nuts, dried fruit IF desired) Place batter in greased pan and bake for 1 hour.
Butter Chicken:
Ingredients:
4 bonesless, skinless, chicken breasts
Cilantro
Chopped Ginger & Garlic
Bottled butter chicken sauce (Pak's/President's choice)
4 bonesless, skinless, chicken breasts

1/2 yellow onion
2 tbsp low fat yogurt (Greek yogurt works well too!)
Cut chicken into cubs, bite size is perfect! Dice up onions (and any other veggies you want to add to the butter chicken.) Sauteed onions, garlic and ginger until browned. Add in chicken with 1 cup of water. Let chicken brown in pan. Add butter chicken sauce to pan. Cover pan and allow chicken and sauce to cook down. When chicken and sauce are mixed well together and begin thickening, you can either let cook until dry or turn off heat and let it stand for 5 minutes. Add cilantro (as much as you can handle) on top to garnish the dish. Enjoy!
